Job Overview
The Blockman is responsible for preparing, cutting, and producing meat products according to company standards. You will work in a butchery environment handling carcass breakdown, deboning, trimming, and production of retail-ready meat cuts. The role also includes maintaining hygiene standards, controlling stock, and ensuring product quality at all times. You will operate butchery equipment such as bandsaws and ensure all safety procedures are followed. Customer interaction and product presentation are also part of daily responsibilities.
Key Responsibilities
• Prepare and break down meat carcasses according to specifications
• Debone cuts and produce items such as mince and sausages
• Operate butchery equipment including bandsaw machines
• Maintain hygiene and safety standards in the butchery area
• Monitor and maintain cold chain compliance and temperature control
• Prevent wastage, shrinkage and product damage
• Assist with receiving meat deliveries and stock control
• Support stock takes and inventory management processes
• Merchandise and display meat products according to store standards
• Assist customers with product selection in a professional manner
• Report faulty equipment and ensure proper maintenance procedures
• Support training of staff on new products and procedures
Requirements And Skills
• Grade 12 or equivalent qualification
• Must meet occupational health and safety medical requirements for butchery work
• Ability to pass numeracy and technical assessments
• Strong meat cutting and butchery production skills
• Ability to work in cold environments for extended periods
• Physical ability to lift heavy meat carcasses and containers
• Strong attention to detail and product accuracy
• Good communication and teamwork skills
• Customer focused mindset and professional behaviour

• Knowledge of meat cuts and retail butchery standards
